In advance of our Sugar Shack Wednesday night buffets we thought we would share a couple of Chefs Richard & Julie's favourite recipes. We are going to start out today with Chef Richard's Maple baked beans and then next Wednesday will share a special dessert from Chef Julie. Then the next week you can come out and try all the recipes in person at the buffet on March 19th.

The ultimate comfort food - baked beans

Baked beans are a recipe that you often forget about. They aren't overstated or fussy instead they are a classic comfort food that is a quintessential part of French Canadian cuisine. As many of you may know Richard is from Rigaud in Quebec as a part of a family that loves to cook and eat. Here is a special recipe of Richard's, a classic baked bean recipe infused with maple syrup. We hope you enjoy!

Richards Maple Infused Baked Beans


  • 1 pound dry white beans soaked overnight in cold water
  • 1 large onion diced
  • 4 cloves of garlic finely chopped
  • 6 ounces of doubled smoked cubed (regular bacon can be substituted)
  • 2 tablespoons of mustard powder
  • 1/2 cup of ketchup
  • 1 cup maple syrup
  • 2 tablespoons of allspice
  • 2 bay leaves
  • salt & pepper to taste


  1. Preheat oven to 325 degrees Fahrenheit
  2. Mix all ingredients together in oven safe bowl or dish
  3. Cover beans with water & cover dish with aluminum foil
  4. Bake at 325 degrees Fahrenheit for 4 to 6 hours
